custom LLM? RAG database?

I have just a few questions about the interactive avatars setup:

Is it possible to use a custom LLM?
if yes, how to?
Could I connect to a RAG database as a knowledge base to achieve fast response times with a large database?
Can I set German or another language as the default start language instead of English?
